Lentil Sloppy Joes

These Lentil Sloppy Joes were so good, I have to share! I have a Pin on my Pinterest Board that inspired this meal. Check out my, Yummy Meals, board for my fun cookbook I use all the time. I pinned a pin from the, Minimalist Baker, for the Vegan Sloppy Joes recipe.

I will give you the recipe I used below. I change up recipes all the time due to what's on the frig, or what's my families tastes. Here is what I did!

1 bag of Green Lentils, a 2 cup + size.

1 red pepper, diced

1 med yellow onion, diced

1 tab Worcestershire sauce vegan if preferred.

1 larger can tomato sauce or soft box pkg.

2 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

1 cup vegetable broth

1 cup water

1 Tab olive oil

In medium sauce pan add water, vegetable broth, and the bag of rinsed lentils. Bring to a boil, then lower heat to simmer. Cook on low for 18 min. Stirring as the lentils absorb the liquid.

In large skillet add olive oil, diced onion, and diced red pepper. Sauté till softened and lightly browned. Add spices and tomato sauce. Cook on lower heat. When lentils are done, add to skillet mixture. Continue to cook until thicken. When done add to buns or lettuce wraps. We added vegan American cheese, mustard and onions to ours. Yum!

We had leftovers and loved the old fashioned Sloppy Joes alternative to meat!

This was easy to make, inexpensive and yummy!
